Banana Bread

Banana Bread.

The credit for this Banana Bread recipe has to go to our good friend Kirsty, she gave this to my wife sometime ago and its truly fabulous. The pickiest of eaters loves this and it’s a firm favorite with the entire family. You can even adapt this recipe by adding blueberries or chocolate chips for a delicious alternative. It’s good, whatever you add to it. We call it Banana Bread, but its more akin to a cake, think Starbucks lemon loaf for a similar texture.

This works whatever the time of day, as a dessert, with a cup of afternoon tea or even for breakfast.

Now I’ve made your mouth water, and those taste buds tingle I guess I should give you the recipe.

You need the following ingredients:-

  • 140g Softened butter (see my Tip Tuesday of how to soften)
  • 140g Caster/Bakers Sugar
  • 2 Beaten eggs
  • 140g Self Raising flour
  • 1tsp Baking powder
  • 2 mashed, very very ripe banana’s

Pre-heat your oven to 350F. While your oven is warming up grease and flour your loaf tin. In a mixing bowl cream the butter and sugar together until light and fluffy. Then add the beaten eggs slowly with a little of the flour and stir until blended. Next, add the remaining flour and fold into the mixture together with the baking powder and the mashed banana’s. Add in additional items such as blueberries or the chocolate chips, or both if you like.

Pour the mixture into the tin and then tap the tin on a hard surface to even and level the mixture. Baking the middle of your pre-heated oven for around 40 mins or until a skewer when poked through the middle comes out clean. When you have removed the Banana Bread from the oven, leave to cool for a few minutes before turning out.
