Organic Spiced Butternut Squash

Now that the clocks have gone back, the nights are drawing in. There’s a chill in the air, it’s time for some homemade soups. We recently bought an Instant Pot and making soups is now so easy – “I told you to get one sooner” said the wife.

Anyway, we have one and this is such a simple recipe and so quick to make! – Start to finish in around 20 minutes! So I made this with ingredients from Trader Joes. Their organic Butter Nut squash was on offer this week. Couple this with an onion, Trader Joes Organic Vegetable Stock and a couple of garlic cloves and you have all the ingredients for this super tasty, warming soup. For the people on Weight Watchers – this is zero points! The wife absolutely loves this soup!

Again, I find myself making multiple meals but the Instant Pot helps with this so much now as I can set it and forget it, now I just need it integrated with Amazon’ Alexa and my life would be complete 🙂 Picky eaters wouldn’t touch this with a ‘barge pole’ so good old sausage and chips for them – oh when will they be adventurous and try something new? So the method below describes using an Instant Pot but you can use the same technique using a regular pot on the stove, it will just take longer and you have to check for the squash to make sure it’s sufficiently softened.Instant Pot Spicy Butternut squash soup

Ingredients

1 whole Butternut Squash

2 garlic cloves

1-quart vegetable stock

1 large onion

1/2 tsp chili powder (optional)

1/2 tsp Cayenne Pepper (optional)

How to make Spicy Butternut Squash soup

 

Trader Jose organic vegetable stock

Peel and finely chop an onion and saute in the Instant Pot until it softens and then add the crushed Garlic. While the onion softens, peel the squash, remove the seeds and chop into small cubes. Place the chopped squash into the Instant Pot and pour in the veggie stock. Close the lid and press the soup button – that’s it. When it’s done, liquidize it until smooth and then keep warm in the pot until your ready to eat it. Serve with some nice crusty bread (not Weight Watcher friendly). I also added in some Chilli Powder and a little Cayenne Pepper to give it the spice – Optional of course. You could also add a little cream as well but remember those WW points.
