Instant Pot Bourbon BBQ Baked Beans

 

I have wanted to make Bourbon BBQ Baked beans for a long time and this weekend was the perfect opportunity. We have the queen in town for a couple of weeks (the mother-in-law) who I get on so well with. With some friends, we decided to have a BBQ. On the menu was BBQ Baby Back ribs  – one of my all-time favorites, roasted Trip-Tip, Burgers and of course Chicken Tikka.

Baby Back Ribs were dry-rubbed with Cumin, onion powder, brown sugar, coriander, garlic salt, a little Mustard powder, and brown sugar. This makes a super tangy yet sweet rub which is perfect for all pork. I always start my ribs in the oven, slowly cooking them on a very low heat before finishing them off the BBQ. I found that cooking them this way ends with a much more tender rib.

If I don’t say so myself the Bourbon BBQ Baked Beans were an absolute hit! They do take a little prep work but so worth it. Be careful the flatulence from these could contribute to global warming 🙂 but so worth it!

How to make Bourbon BBQ Baked Beans

They are simple to make but do take a little prep time as you really need to soak the dried Northern Beans overnight (minimum of 8 hours). This part is key to making these, the remainder of the cooking time is around 1 hour with an Instant Pot. If you don’t have an Instant Pot I would highly recommend getting one!

Ingredients

  • 1lb bag dried Northern Beans
  • 1 medium Onion
  • 1lb bacon (if you are a vegetarian, just leave this out)
  • 2oz Bourbon (no need to use the expensive stuff)
  • 4 cups of chicken stock or vegetable stock
  • 1/4 cup Maple Syrup
  • 1/3 cup of Tomato Ketchup
  • 1/3 cup of Molasses or black treacle
  • 2 tsp of dried mustard powder
  • 1/4 tsp black pepper
  • 1/4 cup of brown sugar
  • 1/4 cup of Apple Cider Vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tsp salt

In a large bowl add the beans and 6 cups of water, together with the salt and leave overnight or for a minimum of 8 hours. You can soak them for longer with no effect on the beans.

Chop the onion and back into smallish pieces. When ready to cook, set your Instant Pot to Saute and saute the bacon and onions until cooked. Add the Apple Cider Vinegar and continue to saute until the vinegar has evaporated. Then turn the Instant Pot off to avoid the ‘Burn’ notice. Then add all of the remaining ingredients including the beans and stir until well mixed. Switch the Instant Pot to manual and pressure cook for 60 minutes. Once cooked, allow a natural release for at least 20 mins before releasing the remaining pressure. Stir well and serve your Bourbon BBQ Baked Beans (you should have enough for 12 people). Oh, and don’t worry about the alcohol this will evaporate during the cooking process.
