Honey and Soy Sauce ChickenThis Honey and Soy Sauce Chicken is a super easy meal, that anyone can make – I promise!

Everyone at GrubandBooze has had a really busy time lately. What with kids going back to school, flights back to England and planning/designing our new kitchen and then choosing contractors. We actually haven’t sat down as a family for dinner for some time. So, I was determined that this weekend we would get to enjoy everyone’s company and sit around the dinner table to eat as a family which is so important to us.

Making the Honey and Soy Sauce Chicken

This takes no time at all to prepare and tastes amazing. I made the marinade in about 2 mins, skinned the chicken thighs and left to marinate all day in the fridge. Tip, if you don’t have a sealable bowl use a 1-gallon zip lock bag to hold the marinating chicken in. You can then gently massage the chicken through the bag to ensure the marinade evenly coats the chicken.

Please marinate for at least 30 minutes if making up as a last-minute dinner, it will taste so good. You could use Chicken Breasts but they may dry out a bit while cooking. Using breasts would make this a very healthy Weight Watcher friendly dinner with a very low point value.

I served this with rice and cauliflower rice for the weight watchers in the family and garnished it with some finely chopped green (spring) onions. It was super delicious!
