This is how you make buttermilk

If a recipe such as fluffy pancakes such as these calls for Buttermilk and you don’t have any of the “real stuff” in the fridge, add a tablespoon of white wine vinegar or lemon juice to regular milk. The mixture won’t get as thick and creamy as buttermilk, but it will create fluffy pancakes!
