People often think of chicken and particular breast meat as dry and bland but Chicken is versatile and easy to work with. It’s only dry and bland if you fail to season it and overcook it. It is fantastic as absorbing many different flavors. I, therefore, like to think of it as the ‘blank canvas’ that just needs a little work to become a masterpiece.
Chicken and Turkey in our house are a mainstay as we try to eat healthily and reduce our red meat intake and this One Pot Mediterranean Chicken would work equally well with a turkey too.
Ingredients for my one-pot Mediterranean Chicken
For the marinade
- 1 tbsp thyme
- 1/2 tsp Cumin
- 1 tsp Onion Powder
- 1/2 tsp Paprika
- 1/2 tsp dried Coriander
- 1/2 tsp Ground Ginger
- 1 tbsp Tomato Paste
- 2 tbsp Olive Oil
- Juice from 1 lemon
- 4 garlic crushed garlic cloves
- A little salt and pepper
Other Ingredients
- 2 whole garlic bulbs
- 1 lemon
- 1 lime
- 1 large roasting chicken
How to make it – It’s really simple!
Start by combining all of the ingredients for the marinade into a bowl, making sure that the ingredients are well combined. Try to make this just before using it, otherwise, the oil and lemon juice will start to congeal.
Pre-heat your over to 375F. Place a whole chicken in a pot that is deep enough so it can be covered with a lid. Thoroughly coat the entire chicken with the marinade. Slice the lemons and lime in half along with the garlic bulbs. Cover and cook the chicken in the oven. A good guideline for cooking poultry is 20 mins per pound plus 20 mins extra, but you should ensure that it reaches an internal temperature of at least 165F to be safe to eat.
Remove the lid for the final 20 mins to brown the chicken. Serve warm with your favorite vegetables or salad. Oh, and a nice glass of your favorite Sauvignon Blanc or Chardonnay. Simply Delicious.
