These are super easy to make, and if you make them in an air fryer, they are healthy and only 2-3 personal points on Weight Watchers or WW.

Serve them with a salad and fat free dressing and you have fab meal for two, which is healthy, nutritious, and very filling. I ate two, with a salad and was full, and I can eat a lot!

You can add so many different combinations into these. Try substituting the chicken for shrimp or ground beef (though the points might increase). My family love these and prefer them to placing all the ingredients on the table and having them build their own taco’s. Guess that’s because they don’t have to do anything. You’re going to need some taco seasoning to make these. For convenience I typically buy it, I know it lazy but hey, I don’t get the time. If you want to try making your own, then try this recipe for taco seasoning.

These all come together in about 30 minutes including prep and cooking time, so it makes a great mid-week meal for the entire family and super cheap too, and let’s face it, we can all do with some cheap meal ideas right now.

INGREDIENTS

  • Egg Roll wrappers – I use the Twin Dragon Egg Roll Wrappers
  • Taco Seasoning
  • 2 Chicken Breasts
  • Vegetables of your choice (I used Kale, Spinach and Grated Carrots
  • Spray oil

HOW TO CONSTRUCT YOUR CHICKEN TACO EGG ROLLS

Firstly, prepare the chicken breasts, remove any fat, and slice thinly and season with the Taco Seasoning. Now, fully cook the chicken in a pan (this can be done ahead of time). Now the fun part, constructing your egg rolls, but first pre-heat your air fryer for a couple of mins to 400 Degrees Fahrenheit.

Take an egg roll wrapper and place on your work surface with a corner pointing towards you, think diamond shape. Now gently wet all four edges of the egg roll wrapper, this will allow it to stick together nicely. Take your chicken and other vegies and place them just below the center line of the wrapper. Do not over fill them as they will burst (trust me I learned the hard way!). Once the filling has been placed, take the point closest to you and fold over the filling, next take the two side points and fold them into the center and finally roll it all up. Spray gently with the spray oil, no need to go overboard on oil (remember they are supposed to be healthy).

Place them in your air fryer and cook for around 10 mins turning regularly to ensure a nice even crispy roll.
