These Loaded Potato Wedges are to die for.

Happy New Year, Hello 2019!

Much fun and revelry have been had at the beginning of the week as we celebrated the New Year with some great friends and our collective kiddos. Then straight on a plane to Columbus Ohio for a client visit.  Finally getting home on Saturday lunchtime.  First class upgrade cushions the laborious flight home as well, however, and gave me time to write this post😁

It’s great that we live in the Pacific time zone, it means we can watch the ball drop and pretend that’s it’s the new year and get the kiddo’s off to bed, we adults then have a full three hours to continue partying before we truly are in the new year 

We decided on appetizers this year rather than one of us cooking a whole meal.  What a treat, we had some amazing food and of course some booze 😉  some great wine from our trip to Temecula, some ‘verve’ for the new year toast and of course a couple of glasses of whiskey.   Why not, it only happens once a year, right?

For the appetizers, we enjoyed Steak and Brie Crostini’s, a Buffalo Chicken dip and Loaded Potato Wedges.   All of it amazing! And if you really don’t like these, then you could try my Tomato and Strawberry Bruschetta

So let’s start with how to make the loaded potato wedges.  They make a nice change from the old classic of nachos. A quick trip to our local Traders Joes gave me all the ingredients that I needed.An amazing Cabernet

Ingredients

  •  1 bunch of green onions (aka spring onions)
  • Traders joes low-fat sour cream
  • Some good quality Trader Joe’s organic potatoes 
  • Trader Joe’s Chilli Lime Seasoning
  • Bacon Bits 
  • Shredded Trader Joe’s cheddar cheese
  • A little-chopped Cilantro

How to make these incredible Loaded Potato Wedges.

Cut the potatoes into good size chunky wedges. Don’t be tempted to try and produce as many wedges as possible.  Fewer thicker wedges are the way to go. I was going to make many and got overruled by the wife. In the end, I’m glad I listened – good call wifey! Put them into a bowl and add a little olive oil and mix so they are evenly coated. Then add a cook sprinkle of the seasoning and again mix them all up in the bowl before spreading them on a baking sheet.  Bake at 400° f until they have become nice and golden brown

While these cool, finely chop the green onions. Once the edges are cooked, sprinkle as much cheese and bacon bits as you wish to have in them and place back in the oven until the cheese has melted nicely.  Remove from the oven, drizzle the sour cream across them and then sprinkle the chopped green onions and cilantro and serve straight off the dish they were cooked in

These things are amazing and you will not be disappointed.  Serve with a nice glass of Cabernet!
