It’s 2019, it’s January and therefore time to hit the obligatory healthy eating campaign. It’s no secret that over Christmas and New Year I may have put a little weight on, well actually more like half a stone!

I’ve also vowed to stop having alcohol for January – This one might be a challenge – in fact, I know I’m not going to be able to do this 🙂

What was I thinking when I made that commitment? How stupid was I? I have at least two business trips and catching up with some friends by the end of January. All I can say is that I have about as much willpower as a ‘fly trying to avoid one of my dogs poops in the backyard on a warm sunny day’ when it comes to booze! It really isn’t going to happen, but at least I “should” be able to eat healthily. Well, let’s see eh, time will tell. All I can say is it’s starting off okayish.

This is a really simple meal to make and can be done in about 30 mins.

Ingredients (serves 2)

  • 2 medium-sized chicken breasts
  • 1 bunch of Asparagus
  • Bag of steamed Cauliflower rice
  • 2 tbs Honey
  • 4 tbs of Teriyaki Sauce
  • 1 crushed garlic clove
  • 1 fresh Lime
  • 1/2 tsp Smoked Paprika

How to make my Honey and Teriyaki Chicken with Asparagus

Dice the chicken into bite-size pieces. In a bowl, combine the Honey, Garlic, Smoked Paprika and Teriyaki sauce. Add the chicken and coat thoroughly with the marinade. Set aside and leave for at least 30 minutes. Use a good quality non-stick frying pan and cook the chicken. Add the Asparagus about halfway through cooking the chicken. Now squeeze the lime juice into the pan and place a lid on the top to ‘steam’ the chicken and Asparagus.

Steam or fry the Cauliflower rice, place on a plate and serve the Chicken and Asparagus on the top. and Enjoy this low calorie, WW friendly meal. Oh my – delicious!
