Picnic Sandwiches

picnic basketPicnic Sandwiches are a mainstay of many a good day out in the summer. Before we know it, summer will be here and the car will be packed up at the weekend. We’ll be heading off to the countryside or the beach for the day. In the back of the car, a picnic, to enjoy while watching the kids play happily in a stream or on a glorious sandy beach. You can picture it now, right? Oh and don’t forget a good wine to wash that food down with.

We love going to the beach, and as we live in Southern California it’s really close or our local lake which has a man-made beach, where we can swim safely, go out on a boat or fish for our dinner. The nice thing about the lake is that we can bring alcohol too and it’s literally a 5-minute drive away! We are also fortunate to be very close to a County Park where we can take our two dogs, Lucy & Max for a good walk as well as it being a great place to picnic.

I don’t know about you, but I always struggle to find ideas for sandwiches that everyone will eat. So here are a few ideas that I’ve come up with to help you out.

Five Picnic Sandwiches

Classic Egg Salad with a twist

Take your hard boiled eggs and mash in a bowl, add some mayonnaise and mix thoroughly. Next, try adding a little Chili Lime Seasoning (Trader Joe’s) and mix well. Build the sandwich and add Rocket/Arugula to the sandwich.

Check out this fab wrap (ok not quite a sandwich) here, it takes some prep work and advance planning, but so worth it. A tip for this one, make sure you wrap your wrap in foil to keep it all together until you’re ready to eat it.

A different Tuna Picnic Sandwich

If you are being careful with your carbs or on a diet then try this Tuna Mayonaise sandwich which has no bread. Take a cucumber and slice down the middle long ways from tip to tip. Hollow out the middle using a melon baller or small spoon. Now mix your tuna with mayo or whatever else you choose and spread into the hollowed out cucumber on both halves. Put the cucumber back together and cut into two or three chunks depending on the size of your cucumber. I would use a hothouse or English cucumber as it’s tougher than other varieties.

Can you Brie-lieve it!

How about a Turkey, Apple and Brie Sandwich. Take a nice fresh baguette, spread a little Dijon Mustard on the bread, add Turkey slices, Brie, Arugula and slices of Apple – delicious!

A dessert Sandwich!

And to round off, how about something completely different. The humble Croissant is so good to use as a base for a savory sandwich but what if you added some Whipped Cream Cheese, fresh fruit such as Strawberries and then cover in a Chocolate spread, creating the ultimate dessert picnic sandwich! mmm mmm.

So there you have it 5 sandwiches worthy of any picnic! One last thing, don’t forget the corkscrew for that all important bottle of wine!
