The best chicken marinade ever

best chicken marinadeWow, this is the best Chicken Marinade that I have ever made!

Seriously, this was unbelievably good, kept the chicken nice and moist and the whole family (well minus the picky eater) couldn’t get enough of it. If you want a spicier marinade you should try my Habenero and Mango Sauce. This is a really versatile sauce that can be used in a variety of ways including as a marinade.

It doesn’t take long to put the best chicken marinade together but it pays to marinate the chicken in it for as long as possible. At a minimum, you should marinate for at least two hours to get the full impact.

Recently we have had such a busy time that we haven’t really had time to ‘experiment’ in the kitchen. What with summer concerts, visiting friends, DIY (including building out our pantry) it has been so hectic and oh, my liver really needs a rest 🙂

As you make up this marinade the smell of the Garlic, Smoked Paprika and Cumin permeate the air. Guaranteed to get people running into the kitchen asking what that delicious smell is.

How to make the best chicken marinade ever

Ingredients

  • 4 tbsp Olive oil
  • 1 tbsp Tomato Paste
  • 1 tsp of Smoked Paprika, Cumin, and Garlic Powder
  • 2 tsp of Onion Powder
  • 1/2 tsp of Ground Coriander
  • 2 tsp of Dried Oregano

Preparation

Combine all of the ingredients in a bowl, stirring until completely combined. Add your chicken breasts to a ziplock bag and pour in the marinade. The marinade will be quite thick so you can add water to thin it out if necessary, but add a little at a time. Seal the bag and then massage the breasts (erm) until completely covered by the marinade. Refrigerate for at least 2 hours, although my preference is overnight.

Bake in the oven or on BBQ until cooked and serve with your favorite side. We served it with the best salad in the world!
