Lemon and Lime Chicken with Sun Dried Tomatoes and Asparagus

Just booked a quick weekend away with some good friends and little one’s bestie, so I’m on a renewed effort to get my beach body into shape 🙂 Well, at least I will give it a go but reversing 30 years of enjoying food and drink might be a little too much to ask 🙂

Anyhow, less about my failures to look after my body and more about this delicious Lemon and Lime Chicken with Sun-Dried Tomatoes and Asparagus.

Ingredients

  • 2 Chicken Breasts, trimmed of any fat
  • 1/2 pound of Asparagus
  • 1 lemon
  • 1 lime
  • Trader Joes Sun Dried Cherry Tomatoes

How to make Lemon and Lime Chicken

Pre-heat oven to 400F. Slice half the lemon and lime and place alternate pieces on top of the chicken and squeeze a little of the remaining juice of the lemon and lime on top. Place on a backing a sheet and bake until cooked through. Put to one side.

Asparagus and Trader Joes Sun Dried Cherry TomatoesMeanwhile, trim the ends of the Asparagus and discard, and then cut the asparagus into two or three pieces each, depending on the size of your asparagus spears, place in a large frying pan with the sun-dried tomatoes and a little olive oil. Cook gently until the asparagus is cooked, don’t overcook it, it should still have a crunch! Then slice the chicken and add to the pan and coat the chicken in the tomatoes. Season with a little salt and pepper.

Serve in a nice bowl and enjoy – this is truly delicious!
